Do you ever have a craving for a salty snack? It seems like that's all I ever want when I get home from a long day of work. Luckily, I found a great recipe for honey-roasted almonds the other day when I was dying for something salty. I know, it doesn't sound like a salty snack. But it worked for me--not too sweet, a little salty, and the spiciness is perfect. I also conveniently made enough to snack on for the rest of the week (unless your husband takes them to work, too).
Here it is, the easiest and most addictive almond recipe ever! Enjoy!
Honey Roasted Almonds
Adapted from The Hungry Viking
2 cups raw almonds
1/4 cup sugar
1/2 teaspoon salt
2 tablespoons honey
2 tablespoons water
1 teaspoon oil
1/2 teaspoon cayenne pepper
Whisk the sugar, salt, and cayenne pepper in a small bowl and set aside. Mix honey, water, and oil in a small saucepan and bring slowly to a boil. Add the almonds to the honey mixture and stir until all of the liquid has been absorbed.
Spread the almonds evenly onto a baking sheet. Pour the sugar mixture over the almonds, making sure to coat all sides. Bake in a 350 degree oven for about 20 minutes, or until the sugar has caramelized. Take almonds immediately off baking sheet to prevent them from sticking and put them in an airtight container. Cool completely with the lid off and then snack away!
